I don’t know if I will ever get to visit Rome (maybe on that mythical extended backpacking-through-Europe trip I’ll take one day) but the next best thing is to look at the beautiful pictures of someone else who has gone. Oh, the history and stories some of those places can tell: Pompeii, Venice, Naples. Who am I kidding, it would be all about the FOOD! Okay, so pancakes are not paleo (more like SWYPO) but sometimes you just want some stick-to-your-ribs food (or something to put butter and syrup on). I went in search of one with a pumpkin base and these were not only easy but satisfying. The recipe only makes about 3-4 pancakes so I doubled in for leftovers.
