How could you not click on a recipe name like this?  What an eclectic list of ingredients!  Alicia is holding on to the last little bits of summer with this one and even gives you a bonus peach salad recipe so you can, too! Can’t you just imagine enjoying this on the back porch with a glass of iced tea? Can we go back a couple weeks to summer so I can do just that?

If you spend any time in the long distance hiking community you have heard of this man, Billy Goat.  I’ve had the pleasure of spotting him in town but haven’t met him personally yet.  Talk about enjoying life as long as you can!  It always seems he’s popping up on a trail somewhere.  He’s isn’t breaking any records, just walking and walking and walking.  “All I do”, he tells me, “is eat, walk and sleep.”  Sounds like the life to me…

My friend, Elle, was taking with me about these guys on our latest hike and sent me the link to share with you!  I have to admit that my impression of llamas is that they just want to spit at you (my sister’s in-laws raised llamas) but it turns out that they also do more than schlep your gear in for you: they can be emotional support animals to help folks et over a fear of sleeping in the wild.  Yes, I swear!  And after reading this article, it is highly possible that I saw these llamas when I was in the Eagle Cap Wilderness this summer because their pictures look a lot like mine…

I have to admit that all I know about shawarma is that fact that the Avengers sit around eating it in one of those after, after the credits clips they do in one of their movies…was it the second Thor?  Not sure.  Anyway, I checked out this paleo version because, well, it sounded delicious.  I’ll have to figure out some swaps for the pepper spice in the marinade and the tomatoes in the tabbouleh salad but I think I can get pretty close.

I love cabbage, if you didn’t already know this about me.  Cheap, nutritious and versatile.  This time of year I get to craving things like sauerkraut and baked apples; the flavors of fall.  Here is another way to enjoy cabbage warm, either as a side or all by itself.

REI sent out this article and video this week and if you haven’t watched it yet, you should.  I am definitely not a skier, let alone an alpine skier who does crazy, insane stuff like this but you don’t have to be nuts to appreciate facing your fears, setting yourself some goals and not letting what other people think of you keep you from being exactly who you want to be.  Watch Caroline Gleich tackle the Chuting Gallery of the Wasatch Mountains in Utah, as well as overcome her life’s obstacles.
